"My mother's recipe": Nici Wickes' Economical Peanut Brownies

An email from a reader giving me feedback on the cost of making my pistachio and white chocolate cookies, got me thinking of economic baking ideas.
This recipe for peanut brownies is just the ticket – easy to make, rich with protein from the egg and nuts, they’re a filling little lunch box filler or perfect to have with a cuppa tea.
Makes 20
Ingredients
- 125g butter
- 1 cup sugar
- 1 egg
- 1 ½ cups flour
- 1 tsp baking powder
- 2 tbsps. cocoa
- 1 cup roasted peanuts or other nuts
Method
- Preheat the oven to 180C.
- Beat the butter and sugar until creamy, then beat in the egg.
- Sift in the dry ingredients, then stir through the nuts.
- Roll tablespoons of dough into balls and place onto baking paper lined tray and press slightly to flatten.
- Bake for 20 minutes. Cool on the tray for 10 minutes while they firm up, then transfer to a cooling rack.
Make them your own
Other nuts can be used – cashews, walnuts, or my favourite, tamari almonds.
